The Anti-Omelet!
I like to make a great big Sunday breakfast for the family. We used to do this every Sunday, but Saturdays are so busy that Sunday morning everyone sleeps in and no one is up at the same time. So we do this more like once or twice a month and it usually ends up being brunch! Three things tend to be repeats in this massive breakfast cooking. Eggs, sausage, and french toast are the top favorites. Generally no matter what is being made either hubby or me will whip up some scrambled eggs to go with it.
Now, who doesn’t like their very own specially made just for them omelet filled with lots of gooey goodness? Well, not me because I’m allergic to eggs! HA! Seriously though. The family loves an omelet, but they were too time consuming to make single omelets for everyone! The cook wants to eat too, you know! The solution is the anti-omelet! How do you make an anti-omelet? Easy!
Step one; mix up a big batch of scrambled eggs. Eggs, milk, dash of favorite seasoning blend to taste (or salt and pepper if you prefer.) Cook until no longer gooey and runny.
Step two; scoop servings onto plates. One for everybody that wants eggs, of course. Easy so far, huh?
Step three; take your omelet filling, and put it on top of the scrambled eggs, sprinkle with shredded cheese of choice. Cheddar and mozzarella work pretty good. If cheese doesn’t melt on the warm eggs, pop it in the microwave for 15 seconds to melt it and make it look pretty!
Step four; there is no step four…eat your eggs you silly!

We almost always do brunch on Sundays. Sat. doesn’t always happen, but sunday big breakfast does!
I love omelettes and I will send this along to the man that makes breakfasts. lol
