Pizza Casserole ~ reader submitted

Our second reader submitted recipe is also easy to make and only needs a handful of ingredients, a lot of which you might already have in your pantry and refrigerator. I made this recipe sent in by Becka in the hopes that my picky eater would sit still and eat some dinner for a change. Unfortunately he thwarted my efforts by not feeling well that particular evening and he headed off to bed pretty early. He tried a quick bite of the left overs for me though!

Another great thing about this recipe is that it’s easily adapted for those that like to do freezer and/or batch cooking. With the simple ingredient list, you can easily make a bunch at one time and layer it into pans for freezing. Although, I am going to recommend leaving the biscuit mix off since it contains milk and eggs and adding that when you’re ready to cook and serve.

  • 1 lb. ground beef
  • 1 (14 oz) jar pizza sauce
  • 2 c. shredded mozzarella cheese
  • 3/4 c. biscuit mix
  • 1 c. milk
  • 2 eggs

Cook beef until browned, stirring to crumble. Drain.
Spoon into 8 inch square baking pan.
Top with pizza sauce and cheese.
Combine biscuit mix, milk and eggs; beat until smooth.
Pour mixture over casserole, covering evenly.
Bake at 400 degrees for 30-35 minutes.

We served it with romaine lettuce salad and black cherry flavored Kool-aid. Everything went together quick and easy, cleanup was a breeze, and I didn’t burn anything! I was going to make garlic bread, but I figured that might be a bit much since it has the biscuit mix in it. I made a few changes, well not really changes, but adjustments. I used ground turkey instead of ground beef (as I will with any recipe that calls for ground beef) and I doubled the recipe to feed all 6 of us. The original recipe that Becka sent me is listed here exactly as she gave it to me, and will easily a feed a family of 4 or less. It’s pretty filling stuff too.

Brian enjoyed it and happily claimed one of the containers of leftover for his lunch the next day. Since we’ve got a baseball game in the evening that will be a nice filling lunch and he won’t get hungry between running all over that place here and there.

I enjoyed it, although I know all that cheese is probably really bad for me and my stomach might hate me later! I can’t pass up anything gooey, cheesy and saucy though. What can I say? I’m weak! Yummy to eat, but probably not the best thing for my waistline.

Dylan had two helpings and his salad before he decided he was stuffed to the gills and he couldn’t eat anymore.

Lucas, as previously mentioned, wasn’t feeling well but he had a bite or two, said it was all right and that was about all I got from him. I think he’s getting the nasty cold that’s been going around, he didn’t even want any toast to eat before bed.

Noah liked it although he wasn’t sure at first and he sort of poked at the biscuit-like crust and ate around it. After a couple fork fulls he seemed okay with it though. He didn’t finish it, but he said he’d definitely eat it again, he was just full.

Ethan said it tasted like pizza and he liked the cheesy strings he got with his fork. Easily amused that one is. He finished his pizza casserole, but left his salad behind. Little stinker.
