Blackberry Chicken

I was looking for something sweet, tangy, and I wasn’t even sure what I wanted to be honest. I kept running into recipes for Raspberry Chicken and Orange Chicken and those just weren’t what I wanted. Orange Chicken is something I would order if we were getting Chinese takeout, and I don’t like Raspberries at all. I don’t know why, I just don’t! So, I decided to bravely whip something together from whatever I could find in the fridge. Blackberry Chicken was the result, and if I may so myself it was pretty darn good!

Picture 005Stuff I used in my recipe;
*Chicken, whatever cut is on sale. I grabbed two packs of tenderloin thingies cause they were cheap.
*1 heaping spoonful minced garlic
*1/2 cup soy sauce
*1/2 cup blackberry preserves
*1/2 cup frozen apple juice concentrate
*1 teaspoon or more Mrs.Dash Extra Spicy

Picture 007You’re going to blend together your ingredients to make a marinade for the chicken. I use this container, I think it’s 2 quarts, that I got at the dollar store, and I open up a large Ziploc bag and wrap it over the edges. This way it’s easy to mix the marinade, but I’m not making a ton of extra dishes ;) Just sort of whisk it all together or use a fork. Make sure the frozen juice concentrate is thawed.

Picture 010Add the chicken to the marinade and shake it all up. Lay it in your baking dish and put it in the fridge. You can marinate for a couple hours, or overnight, or all day, or however long you’d like. I prepped mine in the morning, and made dinner around 5:30. I shook it up again and flipped it over around lunch time. I honestly don’t know if that makes any difference or not! LOL Oh, the juice there in the fridge is of course from the remaining apple juice concentrate.

Bake at 350 degrees F for 30 to 40 minutes until chicken is done. May be a shorter or longer time depending on how thick your chicken pieces are. My tenderloins weren’t very thick so mine was done in about 30 minutes. If they were full sized chicken breast i’d estimate at least 40 minutes cooking time.

We served with mashed potatoes and salad. The chicken got so tender an juicy. It was very good and there were several requests for seconds! All four boys loved it, and Brian took the few leftover pieces in his lunch the next day. It was a great meal and I’ll definitely be repeating it. Why can’t all my cooking concoctions come out this good?

    That looks sooo tasty!!! My wife actually made a similar meal (she got the recipe from a cookbook I think) a while back and it came out pretty good. We’ll have to give this one a try!

    it sounds delicious! I am not a lover of raspberries either… yuck. can’t imagine it tasting good with anything. Cherry chicken is great… and a cherry nut pork loin is good too… :)

    This looks wonderful. I never would have thought of combining blackberries and chicken but will definitely try your recipe. Would be pretty easy do adapt to other fruit flavors as well. Hmm… I have some chicken and apple jelly in the fridge. I’ll let you know how it turns out.
