Happy Thanksgiving!

I hope everyone has had a great Thanksgiving dinner and found many things to be thankful for. We had a good dinner and spent some time with family. We made a ham in the roaster, and some springy pasta salad (it was nearly 80 degrees here today we wanted some cold food too!) and I made a Cranberry Cherry Pie recipe that I found over at Internet Based Moms message boards. It came out great despite my not being able to find any fresh or frozen cranberries at not one, but two grocery stores. I gave up and used Craisins instead! (Craisins are just cranberries dried like a grape is to make a raisin…they’re really yummy for a snack too and in salads and all kinds of stuff)

I know I already mentioned that pies and I do not get along. Of course I used store bought pie crust, I didn’t even attempt to make my own this year. And I went to Kroger and bought a 10 inch pumpkin pie for $5.69, it was quite good. Anyhow, there were no leftovers so I’m sure that’s a good sign! Everyone liked the Cranberry Cherry Pie and asked me where I found the recipe :) Of course I snapped a few pictures while I was making it last night. I’d share pictures from today except I left my camera and the bottle of wine sitting on the kitchen counter because I was so focused on not being late.

A big thank you to Shelly for posting this recipe at the board and inspiring me to make pie this holiday. The ingredients were really easy peasy to put together ~ Quoting Shelly’s recipe from the message board …

Cranberry Cherry Pie

Pie Crust (2 crust pie)
2 c. frozen cranberries
3/4 c. sugar
2 Tbsp. cornstarch
21 oz. can cherry pie filling

Prepare pie crust, placing bottom layer in a 9″ pie pan. Leave 1/2″ extending. In a large bowl, combine cranberries, sugar and cornstarch. Mix well. Stir in cherry pie filling. Mix lightly. Spoon into pie crust. Top with second crust and flute the edges. Cut slits in several places on the crust. Bake 35-45 minutes or until crust is golden brown.
