What’s Cooking Wednesday 1st Edition - Tomato Basil Chicken and Pasta

Like we need another meme, right? Well darnit I wanted to start one and I was going to tell you about what I’m cooking for dinner tonight. So, I decided to bravely begin a new meme and call it What’s Cooking Wednesday. Ta-da. Then as I wrote this post I wondered if there was anything like it already because the internet is full of this kind of stuff, and sure enough I found more than one already out there. There were two memes, a few blogs that use it as the theme for their own Wednesday posting, and then of course there was cooking on other various days of the week. Well darnnabit I made a graphic and wrote the whole post our already. So, I’m not going to sit here and pretend that what I’ve thought of is original in anyway, because this kind of thing is nothing new online. So here’s the Just Not Martha What’s Cooking Wednesday 1st Edition, installment number one of this shiny new meme/theme/feature thing that I decided to post today.

What’s cooking today at my house?

Tomato Basil Chicken and Pasta

First I found a recipe at AllRecipes.com. But, I am modifying it a little bit and changing some things around.

The original recipe on AllRecipes.com says:

INGREDIENTS

* 1 (8 ounce) package angel hair pasta
* 2 teaspoons olive oil
* 1/2 cup finely chopped onion
* 1 clove garlic, chopped
* 2 1/2 cups chopped tomatoes
* 2 cups boneless chicken breast halves, cooked and cubed
* 1/4 cup chopped fresh basil
* 1/2 teaspoon salt
* 1/8 teaspoon hot pepper sauce
* 1/4 cup Parmesan cheese

DIRECTIONS

1. In a large pot of salted boiling water, cook angel hair pasta until it is al dente, about 8 to 10 minutes. Drain, and set aside.
2. In a large skillet, heat oil over medium-high heat. Saute the onions and garlic. Stir in the tomatoes, chicken, basil, salt and hot pepper sauce. Reduce heat to medium, and cover skillet. Simmer for about 5 minutes, stirring frequently, until mixture is hot and tomatoes are soft.
3. Toss sauce with hot cooked angel hair pasta to coat. Serve with Parmesan cheese.

For the most part I am following the recipe, but making a few minor changes so that I don’t have to go grocery shopping -lol-

I don’t have fresh tomatoes so I’m using a can of Del Monte Tomato Basil Garlic Diced and Seasoned tomatoes instead. I’m still adding some garlic to that, cause we love garlic and it’s not garlic enough for me. Also adding a pinch of basil to it. The can may say that it’s seasoned but it’s not that noticeable of a flavor and for this dish we want those flavors to really be there. I am leaving out the hot pepper sauce, because no one in our house likes hot pepper anything. Everything else, I’ve left the same.

Obviously it’s not dinner time yet, but I wanted to get this posted and get the meme started off! I’ll be back later tonight to add pictures to go with this recipe.
