Frozen Four Foods on Friday!

So, I’m sitting here wrapping up stuff on Friday night. Did some recipe hunting for Brian so he doesn’t get bored with his rice and carrots -lol- and I decided to participate in Four Foods on Friday. I always mean to play along, and I always forget!

#1. What brand of frozen dinners do you think are the best and why?
I <3 Stouffer's mac 'n' cheese. And also their lasagna. Lean Cuisine's are okay too, but those are also from Stouffer's. So, I guess Stouffer's wins by default.

#2. What is your favorite frozen waffle or breakfast food?
French toast sticks, any brand will do ;)

#3. Frozen appetizers. Which one is your favorite?
Mozzarella sticks! Mmmmmm yummy!

#4. Share a recipe or meal made from at least one frozen food.
recipe is from Birds Eye’s website, totally yummy stuff. Amazing what you find printed on the back of a bag of veggies!

Angel Hair Pasta with Broccoli, Cauliflower and Carrots

# 1 tsp olive oil
# ½ tsp garlic, minced
# ¼ cup onion, chopped
# 1-14.5oz can Italian-style tomatoes with juice
# 1-16oz bag Birds Eye® Frozen Broccoli Florets, Cauliflower & Carrots
# 1 lb grilled chicken, cut into strips
# 2 Tbsp Balsamic vinegar
# 4 oz angel hair pasta, cooked
# 3 Tbsp shredded Parmesan cheese

In a skillet, cook onion and garlic in oil on MEDIUM heat for 2 to 3 minutes or until onion is soft and transparent. Add chicken and cook for 2-3 minutes. Add tomatoes, balsamic vinegar and frozen vegetables; cover, and cook for 5 to 6 minutes or until vegetables are tender.

  2. You know I didn’t even notice Stouffers made Lean Cuisine. Many people seem to love their mac and cheese. I’ve never made it, I always make the boxed.

  3. I’ve just discovered a new frozen food that will now go on automatic refill in my kitchen: veggie blends. At your local grocery chain they should normally have cheap-brand stir fry veggies, pepper blends, things like that. My life gets way too busy to buy fresh produce. It all goes bad before I get a chance to cook with it! So these little frozen packs are a lifesaver for me! And quick too!

You love being a mom. It's one of the best things in the world and you'd never turn it in for any other life. Me too!

But, there's no need to strive to be Super Woman or to put on any fronts that's it's all a breeze. Fact of the matter is, being a mom, a spouse, the cook, cleaner, nurse, chauffeur, bookkeeper, event planner, organizer and [fill in the blank with your many duties here] is not always easy. All those roles and duties can really wear you out (even if you love doing them) and make you feel like there's no time left over to do the things you want to do.
