monday morning pancakes for me and headachey little boy

Lucas is home from school today, Brian had to switch his day off today for tomorrow because the van wasn’t ready yet (don’t get me started on that story, ugh….) So, it’s just me and Lucas. He had a really bad headache and went back to bed this morning. I really think the poor kid has inherited my migraine tendency or something.

Anyhow, pancakes are probably his most favorite food in the whole wide world. He would eat them three times a day if he could. Anytime we check out a new restaurant the first thing he wants to know is if they have pancakes on their menu, and do they serve breakfast all day! He loves IHOP for their syrup and pancake variety. Yes, he even had the Horton Hears a Who pancakes, and he loved them. How could any kid not love them, they’re drizzled in a sugary frosting icing!!

When he woke up again I asked if he ate yet, thinking that breakfast and some advil will help his headache. He hadn’t eaten, so I offered to make pancakes thinking we had pancake mix in the cabinet. We almost always have pancake mix. Whooops I should have looked first. No pancake mix. That’s okay I’ll whip some up…. we have all the other stuff. Wrong-o, we’re out of milk, brothers used it all on that boring cereal I mentioned earlier.

Time to improvise!!! I canvased the fridge and pantry and made mental note of what we had and then did some pancake recipe comparisons and came up with a brilliant idea for a milk substitute and off we went. I also found a good use for that Cinnamon Vanilla coffee creamer that I didn’t like in my coffee…..

drum roll please……. I present you with…..

Luke’s Monday Morning Pancakes:

1 cup all purpose flour
2 tablespoons sugar
2 tablespoons baking powder
1 teaspoon salt
1 egg
1 cup milk
2 tablespoons vegetable oil
3/4 cup Cinnamon Vanilla Coffee Mate creamer
1/4 cup water

Scoop onto hot griddle, flip when edges are bubbled and ready for flipping as you normally would. Add syrup and enjoy.

I’d add a picture of the big fluffy deliciousness here, but my camera batteries are dead and I’m not sure where Dylan’s camera is hiding at. It’s probably in his nightstand somewhere, and I dare not look in there.

    LMAO at you and your too much meat hamburger helper the other night. I am quite impressed with myself this morning. The pancakes were good, I had two of them…. Lucas ate three great big ones! That child loves pancakes.

    Those pancakes sound delicious! Some of the best ideas are spawned from improvisation…like scotch tape. I bet that those pancakes are really sweet on their own, and I might not even need syrup. I love pancakes and waffles, so I’ll give it a try.
