Salad Dressing ~ What’s Cooking Wednesday
The strict diet for Brian is going really well. We’ve always had salad with dinner, but more often these days salad is becoming the dinner. Lettuce and veggies all tossed together. The grocery store closest to us has a very limited supply of salad dressing to choose from, so I decided to make some salad dressing for tonight instead.
Honey Mustard Salad Dressing
1/2 cup vinegar
1 cup mayonnaise
1 teaspoon prepared mustard
1 teaspoon sugar
1 teaspoon finely chopped onion
1/2 cup honey
1 teaspoon minced parsley
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup vegetable oil
In a small bowl, combine the vinegar, mayonnaise and mustard. Add sugar, onion, honey, parsley, salt and pepper. Slowly pour oil into mixture while mixing briskly with a wire whisk. Refrigerate until ready to serve.
I omitted the onion, because thats on the foods to avoid list for Brian … that and I didn’t have any onions anyhow! LOL
