It’s been awhile since I made homemade mac ‘n cheese. The last few times we’ve had mac it’s been out of a box. Hey, there’s nothing wrong with box mac … but sometimes you just want something a little more flavorful. So, inspired by Jenn’s mac ‘n cheese casserole, and all the left over stromboli ingredients from the hub’s birthday dinner sitting in my fridge, I decided it was a good day for some mac ‘n cheese creativity.
Why is it creativity? Because I’m making it up as I go along using what I have in my fridge and not following any measurements. Sometimes these things work out good for me, and sometimes they don’t. So, let’s get started.
What I’ve got: ziti noodles, shredded cheddar, shredded mozzarella, ricotta, butter, eggs, milk, paprika, and a 2 quart dutch oven full of boiling water and Jenn’s recipe to use as a reference.

Let’s see how it goes. Cook and drain noodles, rinse.

Put back into 2 quart dutch oven. Stir in butter until it melts.

Stir in cheeses. Measuring cup? We don’t need no stinking measuring cup. I used whatever was left of the cheddar and mozzarella, a few big scoops of the ricotta.
Dash with Paprika for that yummy Stouffer’s mac ‘n cheese look and taste.

Toss it all in the oven at 350 until it looks pretty. (You might need to transfer to a casserole for this, my pots and pans are fabulous and go from stove, to oven, to microwave, to fridge. Love it ![]()

Of course, with Lucas and his aversion to all things noodle I couldn’t just serve pasta for dinner. So, we also cooked up some Nathan’s hot dogs and a pack of brats. Yummy stuff! Probably not the healthiest meal on the planet, but it fed us for not a lot of money and used up some of the leftovers from last week.

Yummy…Nothing beats homemade macaroni and cheese when it comes to good hearty comfort food. I make it all the time, but mine isn’t as extravagant looking as yours! Maybe I should try using some milk…Thanks for the idea!
That looks like some delicious mac and cheese. I just had some dinner, but I’m still getting hungry seeing those pictures. I might have to make some of this for my wife and me.

Most of the time I just grate cheddar over noodles, and that’s enough. But when I make a casserole, I always use a recipe with cream cheese in it because that’s how my mom made it. But I made the mistake of using low fat one time, and the cream cheese stayed in a bunch of chunks instead of melting! Still good, though.
