cheesecake recipesYou may have noticed the cute little Cheesecake Recipe ebook in my sidebar over there on the right and also on the Ebooks page. I just wanted to bring a little attention to it and also mention that it’s loaded and ready for affiliates to sign up through e-junkie. I’m offering 50% on all sales to affiliates.

Smooth and Rich, cheesecake is the most tasty and unforgettable way to end a dinner meal or if you are really decadent, start the day. Now with 90 Delicious Cheesecake Recipes, you can easily treat yourself to a simply delicious homemade slice of heaven or try some of the gourmet cheesecake recipe ideas with friends or family.

A note to affiliates, one small downfall to using e-junkie is that it doesn’t have an affiliates center for me to upload graphics and buttons and goodies for you to use in promotion. I’m working on a way to get around all that and Val and I are going to be setting up an all inclusive affiliate center over at Easy Wahm. In the meantime feel free to use any the images that are on the sales page in your promotions. I will send out an affiliate email when I have a graphics page up for you all.

The strict diet for Brian is going really well. We’ve always had salad with dinner, but more often these days salad is becoming the dinner. Lettuce and veggies all tossed together. The grocery store closest to us has a very limited supply of salad dressing to choose from, so I decided to make some salad dressing for tonight instead.

Honey Mustard Salad Dressing

1/2 cup vinegar
1 cup mayonnaise
1 teaspoon prepared mustard
1 teaspoon sugar
1 teaspoon finely chopped onion
1/2 cup honey
1 teaspoon minced parsley
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup vegetable oil

In a small bowl, combine the vinegar, mayonnaise and mustard. Add sugar, onion, honey, parsley, salt and pepper. Slowly pour oil into mixture while mixing briskly with a wire whisk. Refrigerate until ready to serve.

I omitted the onion, because thats on the foods to avoid list for Brian … that and I didn’t have any onions anyhow! LOL

I’d add some pretty pictures here, but my camera batteries have died :(

Don’t forget to come back here and post a comment or send a trackback letting us know that you participated this week so we can all come see what’s good to eat at your house! You don’t have to post pictures unless you want to, and you don’t have to tell us your secret ingredient, heck you don’t even have to give us the recipe if you don’t want to, you can just tell us what you’re having and why you like that particular dish. Have fun in the kitchen!

Lucas is home from school today, Brian had to switch his day off today for tomorrow because the van wasn’t ready yet (don’t get me started on that story, ugh….) So, it’s just me and Lucas. He had a really bad headache and went back to bed this morning. I really think the poor kid has inherited my migraine tendency or something.

Anyhow, pancakes are probably his most favorite food in the whole wide world. He would eat them three times a day if he could. Anytime we check out a new restaurant the first thing he wants to know is if they have pancakes on their menu, and do they serve breakfast all day! He loves IHOP for their syrup and pancake variety. Yes, he even had the Horton Hears a Who pancakes, and he loved them. How could any kid not love them, they’re drizzled in a sugary frosting icing!!

When he woke up again I asked if he ate yet, thinking that breakfast and some advil will help his headache. He hadn’t eaten, so I offered to make pancakes thinking we had pancake mix in the cabinet. We almost always have pancake mix. Whooops I should have looked first. No pancake mix. That’s okay I’ll whip some up…. we have all the other stuff. Wrong-o, we’re out of milk, brothers used it all on that boring cereal I mentioned earlier.

Time to improvise!!! I canvased the fridge and pantry and made mental note of what we had and then did some pancake recipe comparisons and came up with a brilliant idea for a milk substitute and off we went. I also found a good use for that Cinnamon Vanilla coffee creamer that I didn’t like in my coffee…..

drum roll please……. I present you with…..

Luke’s Monday Morning Pancakes:

1 cup all purpose flour
2 tablespoons sugar
2 tablespoons baking powder
1 teaspoon salt
1 egg
1 cup milk
2 tablespoons vegetable oil
3/4 cup Cinnamon Vanilla Coffee Mate creamer
1/4 cup water

Scoop onto hot griddle, flip when edges are bubbled and ready for flipping as you normally would. Add syrup and enjoy.

I’d add a picture of the big fluffy deliciousness here, but my camera batteries are dead and I’m not sure where Dylan’s camera is hiding at. It’s probably in his nightstand somewhere, and I dare not look in there.

It’s been awhile since I posted a recipe on here! So much for the learning to cook portion of the blog, right? LOL I found this fun recipe in my recipe stash tonight and I think I might have to give it a try with the kids over the weekend. I think they’ll have fun making it!

Fresh Fruit Salsa

Two apples (preferably Fuji or Granny Smith)
Three kiwis
Eight strawberries
Two peaches
2 tablespoons of sugar
1 to 2 tablespoons of lime juice

1) Clean all of the fruit.

2) Peel the kiwi and peaches, followed by chopping all of the fruit into bite-sized pieces.

3) Place the fruit in a bowl and toss with lime juice.

4) Sprinkle with sugar and toss again.

5) Chill for 10 minutes and serve with cinnamon tortilla chips available at the grocery store.

If you wish to make cinnamon tortilla chips on your own, consider the following recipe, or you can pick up a bag at the bakery:

Cinnamon Tortilla Chips

2 tablespoons of granulated sugar
1 teaspoon of ground cinnamon
8 (8-inch) flour tortillas
6 tablespoons of butter (melted)

1) In a small bowl, combine the sugar and cinnamon. Set aside.

2) Brush melted butter on the tops of the tortillas.

3) Cut each tortilla into eight wedges.

4) Arrange the tortillas in a single layer on a baking sheet.

5) Lightly sprinkle the cinnamon mixture on top of the tortillas.

6) Bake in the oven at 400 degrees for 4 to 6 minutes. Store in an airtight container for later use.

I haven’t participated in this meme for awhile and I figured it was time to get back into it. Cass moved the meme from DigiCass over to Midlife Musings recently and that made me realize just how long it’s been since I played along. Why did I stop playing? Well there were camera issues, and battery issues, and then there were skin issues, and just to round things off there was also my forgetfulness! So here are my pics for this weeks Self Portrait Sunday.

I should have waited until after I went and had my eyebrows shaped to snap the pics… but oh well maybe next week. I’ll admit that also part of my non-participation was I’m having weight issues and I feel like a bloated whale most of the time. Although not enough to make me take stock in hoodia products, still enough to make me want to avoid the camera. I’m over it now though and life can proceed as usual. I’ll even be rejoining my fellow weight loss bloggers as soon as I get a new scale battery, mine died and I have to go to Target and see if I can find the right size.

Go check out all the participants this week and add your own pic too!
