It’s been awhile since I posted a recipe on here! So much for the learning to cook portion of the blog, right? LOL I found this fun recipe in my recipe stash tonight and I think I might have to give it a try with the kids over the weekend. I think they’ll have fun making it!

Fresh Fruit Salsa

Two apples (preferably Fuji or Granny Smith)
Three kiwis
Eight strawberries
Two peaches
2 tablespoons of sugar
1 to 2 tablespoons of lime juice

1) Clean all of the fruit.

2) Peel the kiwi and peaches, followed by chopping all of the fruit into bite-sized pieces.

3) Place the fruit in a bowl and toss with lime juice.

4) Sprinkle with sugar and toss again.

5) Chill for 10 minutes and serve with cinnamon tortilla chips available at the grocery store.

If you wish to make cinnamon tortilla chips on your own, consider the following recipe, or you can pick up a bag at the bakery:

Cinnamon Tortilla Chips

2 tablespoons of granulated sugar
1 teaspoon of ground cinnamon
8 (8-inch) flour tortillas
6 tablespoons of butter (melted)

1) In a small bowl, combine the sugar and cinnamon. Set aside.

2) Brush melted butter on the tops of the tortillas.

3) Cut each tortilla into eight wedges.

4) Arrange the tortillas in a single layer on a baking sheet.

5) Lightly sprinkle the cinnamon mixture on top of the tortillas.

6) Bake in the oven at 400 degrees for 4 to 6 minutes. Store in an airtight container for later use.

I had intended to pack us all bentos today that we would be able to eat between karate class and Busch Gardens, but the evil forces of nature have stopped my efforts. Only Lucas went to karate class today, Ethan wasn’t feeling well and his asthma was kicking his butt. He was determined that he could make it to Busch Gardens today, but it got dark and looked like a storm so we convinced him to wait until tomorrow when he was hopefully feeling better.

Instead I present some lunch box bentos from the past two weeks that I forgot to post! LOL None of these are in my pretty orange bento that Jenn sent me, but I have used it .. twice now~! I just keep forgetting to take pictures. *bad Loretta*

Green and White Bentos … can you guess which one belongs to Lucas? I’ll give you hint, he doesn’t much like “green” food.

DVC00152This is what Brian’s box tends to look like when I make him one. Pretty boring, but it keeps him away from the vending machines. And there’s usually a container of fruit on the side too. Apples, grapes, bananas, cantaloupe, whatever looks good at the store that particular day.
